Former Hakkasan, Nahm and Nobu chef Dabiz Muñoz has opened CircusXO bar in London.

The groundbreaking chef-owner of Diver XO, the only 3 Michelin-starred restaurant in Madrid, as well as its wacky offbeats, StreetXO in both Madrid and London, aims to take his famous ‘Liquid Cuisine’ cocktail menu to another level.

Approaching the cocktail menu with a 3 Michelin Star gastronomic approach, the bar can be found inside the quasi-industrial surroundings of the StreetXO restaurant in Mayfair.

The beautifully presented cocktails apply a chef's eye to bartending with the likes of "Drinking Pekin Duck" - a mix of hoisin syrup, mezcal dressed with Shaoxing wine, lime juice, cucumber soda and duck condiment - and "Yellow Curry", with tastes of saffron, ginger, lemongrass, mandarins, cumin, basil and vapours.

There's also an XO Premium Twist menu which serves up classic cocktails with rare and expensive bottles, such as the "King of Old Fashioned " with Havana Club MAXIMO (which retails at £1250 a bottle), the "High Society Sazerac" made with Macallan 18yo, Martell XO and Pernod Absinthe, or the "Imperial Japanese Sour" with Suntori Hibiki 17yo.

The "XO Drivers Experience" virgin cocktail menu means that those escaping the booze need not miss out.
